This is my go-to recipe for busy weeknights! With just a few ingredients, your slow cooker does all the work, leaving you with incredibly tender, flavorful chicken that’s perfect for tacos, bowls, and salads. It’s a meal-prep dream that the whole family will love.

  • 2 lbs boneless, skinless chicken breasts (or thighs for extra juicy chicken)
  • 1 (16 oz) jar salsa verde (use a good quality one you love!)
  • 2 tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp onion powder

Instructions

  1. Layer the Chicken: Place the chicken breasts in a single layer at the bottom of your slow cooker.
  2. Add Spices & Salsa: In a small bowl, mix the chili powder, garlic powder, and onion powder. Sprinkle this evenly over the chicken. Pour the entire jar of salsa verde over the top, making sure to cover the chicken completely.
  3. Cook Low & Slow: Secure the lid and cook on LOW for 5 hours or on HIGH for 2.5 hours. Try not to peek, as this lets the heat escape!
  4. Shred & Stir: Once cooked, the chicken should be very tender. Shred the chicken directly in the slow cooker using two forks. Give everything a good stir to let the shredded chicken soak up all the delicious sauce.

Notes

  • Serving Suggestions: This chicken is amazing in tacos, burritos, quesadillas, or nachos. Serve it over cilantro-lime rice for a simple bowl or on top of a salad for a healthy option. Top with avocado, cotija cheese, sour cream, and fresh cilantro!
  • Tips & Tricks: For the fastest shredding ever, transfer the cooked chicken breasts to a large bowl and use a hand mixer on low speed for about 15 seconds. It sounds crazy, but it works perfectly!
  • Storage & Reheating:
    • Fridge: Store leftovers in an airtight container for up to 4 days. The flavors get even better!
    • Freezer: Let the chicken cool completely, then store it in a freezer-safe bag or container for up to 3 months.
    • Reheat: Warm gently in a skillet over medium-low heat. Add a splash of water or chicken broth to keep it moist and saucy.
