Cilantro Lime Rice is a light, tangy, and herbaceous side dish that pairs beautifully with Mexican-inspired meals. Made effortlessly in the Instant Pot, it delivers fluffy rice infused with fresh cilantro and lime juice, perfect for burrito bowls, tacos, or grilled mains.

Ingredients

Scale
  • 1 cup long-grain white rice or jasmine rice (un-rinsed)
  • 1¼ cups water
  • 2 teaspoons olive oil, divided
  • 1 teaspoon kosher salt
  • Juice of ½ lime (about 1 tablespoon)
  • ¼ cup fresh cilantro, finely chopped

Substitution Tips:

  • Replace olive oil with avocado oil or melted butter for a richer flavor.
  • Use chicken or vegetable broth instead of water for added depth.
  • Swap lime juice with lemon juice if needed, though it alters the flavor slightly.

Instructions

  1. Prepare the Base: Add rice, water, 1 teaspoon olive oil, and salt to the Instant Pot. Stir gently to combine but avoid overmixing to prevent clumping.
  2. Pressure Cook: Secure the lid and set the valve to “Sealing.” Cook on high pressure for 3 minutes. Allow a natural pressure release for 10 minutes before manually releasing any remaining steam.
  3. Fluff and Flavor: Open the lid and fluff the rice gently with a fork. In a medium bowl, mix the remaining olive oil, lime juice, and chopped cilantro. Add this mixture to the rice and toss until evenly combined.

Notes

Serving Suggestions:

  • Serve as a base for burrito bowls or alongside tacos, enchiladas, or grilled chicken.
  • Garnish with extra cilantro leaves or lime wedges for added visual appeal.

Tips & Tricks:

  • Avoid rinsing the rice to retain its natural starches for a slightly sticky texture.
  • Fluff the rice gently with a fork to prevent breaking the grains.

Storage & Reheating:

  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • Reheat in the microwave with a splash of water or broth to restore moisture.
  • For longer storage, freeze in portions for up to 3 months; thaw overnight in the fridge before reheating.
