This Mexican Caesar Salad is a vibrant take on the traditional Caesar, blending crisp romaine lettuce with bold Mexican-inspired ingredients like black beans, corn, avocado, and crunchy tortilla strips. Tossed in creamy Caesar dressing with a hint of spice, this salad is perfect for quick lunches or as a side dish for any meal.

Ingredients

Scale

Salad:

  • 2 heads romaine lettuce, chopped
  • 1 cup corn, cooked and drained
  • 1 cup black beans, cooked and drained
  • 1 medium avocado, sliced or cubed
  • 12 cups tortilla strips (or crumbled tortilla chips)
  • ½ cup cilantro, chopped
  • ¼ cup cotija cheese, crumbled
  • Lime wedges (optional, for serving)

Dressing:

  • ½ cup Caesar salad dressing
  • ¼ teaspoon Mexican seasoning blend (optional)

Instructions

  1. Prep Ingredients: Chop romaine lettuce into bite-sized pieces. Drain the corn and black beans thoroughly. Slice or cube the avocado just before assembling to keep it fresh.
  2. Assemble the Salad: In a large serving bowl, layer the romaine lettuce as the base. Evenly distribute the corn and black beans over the top. Add avocado slices or cubes.
  3. Add Garnishes: Scatter tortilla strips across the salad for crunch. Sprinkle with chopped cilantro and crumbled cotija cheese for flavor and color.
  4. Prepare Dressing: If desired, mix the Mexican seasoning blend into the Caesar dressing for an extra kick of spice.
  5. Toss and Serve: Drizzle the dressing over the salad and toss gently to coat all ingredients evenly. Serve immediately with lime wedges on the side for an optional zesty squeeze.

Notes

Serving Suggestions: Pair this salad with grilled chicken, shrimp tacos, or tortilla soup for a complete meal. It also works well as a standalone light lunch or dinner option.

Tips & Tricks:

  • To prevent sogginess, add tortilla strips just before serving.
  • Toss avocado slices in lime juice to keep them from browning if prepping ahead.
  • Adjust seasoning to taste—start with less dressing and add more if needed.

Storage & Reheating:

  • Store leftover components separately in airtight containers in the refrigerator for up to 2 days.
  • Keep tortilla strips at room temperature in a sealed container to maintain their crunch.
  • This salad is best enjoyed fresh; however, you can reassemble leftovers just before serving.
