All the taco flavor you crave, stacked into one simple, cheesy ground beef casserole! This Easy Layered Taco Bake is the answer to busy weeknights, delivering a crowd-pleasing dinner with minimal fuss. Think of it as a taco lasagna—it’s cozy, satisfying, and guaranteed to disappear fast.

  • 1 lb ground beef (I suggest an 80/20 blend for flavor)
  • 1 (1-ounce) packet taco seasoning
  • ¼ cup water
  • ½ cup salsa con queso
  • 3 (8-inch) soft flour tortillas
  • 2 cups shredded Mexican cheese blend

Instructions

  1. Prep: Preheat your oven to 350°F (175°C). Lightly grease an 8-inch round or square baking pan.
  2. Cook the Beef: In a large skillet over medium-high heat, cook and crumble the ground beef until no pink remains. Drain off any excess grease.
  3. Make the Filling: Reduce the heat to medium. Stir the taco seasoning and water into the beef and let it simmer for 2-3 minutes until the sauce thickens. Turn off the heat and stir in the salsa con queso until the filling is rich and creamy.
  4. Assemble the Layers: Place one tortilla in the bottom of your prepared pan. Top it with ⅓ of the meat mixture and ⅓ of the shredded cheese. Repeat the layers two more times: tortilla, meat, cheese. Finish with the last of the cheese on top.
  5. Bake and Rest: Bake for 15-20 minutes, or until the cheese is completely melted and bubbly. This is important: Let the taco bake rest for at least 5 minutes before slicing and serving. This helps the layers set for clean cuts.
